Ingredients
  

  • 500 g Boneless and skinless chicken breast (be sure to cut each breast in half to make cooking fast)
  • 1/4 cup Creamy peanut butter
  • 1/4 cup Coconut milk
  • 3/4 cup Salsa (mild)
  • 2 tbsp Lime juice
  • 1 tbsp All natural aminos or other gluten free soy sauce
  • 1 tsp Ground ginger of 1 tsp of fresh gingerroot grated
  • Chopped peanuts (for garnish)
  • Minced cilantro (for garnish)

Preparation

  • After preparing all the gluten free ingredients, cut the chicken breast in half and place in a slow cooker. In a bowl, mix the peanut butter, natural aminos (or gluten free soy sauce), mild salsa, and lime juice. Pour this mixture over the boneless, skinless chicken breast inside the slow cooker and cook for about 4 to 5 hours on low heat.
  • When ready take the chicken breasts out, let cool for a few minutes and shred fairly large pieces. Place back in slow cooker and add the coconut milk and cook for another 20 minutes to reheat before Serving.

Serving Suggestions

  • Serve the Thai Chicken over your choice of rice noodles or either brown or white rice. Garnish the delicious Thai Chicken with peanuts and cilantro as desired and enjoy your delicious gluten free meal
